Normally only the cutting edge is worn but there may be cracks or other damage to look out for. Also look at where serial numbers have been stamped into the metal as these are quite a cool feature to have in the end blade.
But the cheapie mowers probably just have pot steel for the blade. If you want some good knife steel you want to use old lumber bandsaw blades they are durable but will also hold an edge much better than a lawn mower blade. Most lawnmower blades as far as i know are 1080 carbon steel. A lawnmower blade is a poor choice for making a knife when you spend your time doing the same thing with a better steel that will hold a sharp edge.
But i dont you should be hitting hardened steel on the anvil i would clamp it in the vise vertically and tap with a hammer to break it. Lawn mower blades are never a tempered steel because of risk of fracture caused by accidental rock that may hit it. Fashioned by youtuber green beetle it was hammered our and sharped. In my experience lawn mower blades do not seem hardened and they re not very sharp.
